Collagen Boosting Vanilla Cashew Butter
A few weeks ago, I made a batch of this cashew butter for a friend’s birthday and I was reminded how amazing it is. While I’ll warn you up front that it is somewhat time consuming, it is 100% worth it! This stuff is pure gold. Enjoy on toast, in your overnight oats, or by the spoonful! Here’s how to make it:

Food Processor
You need a pretty strong food processor so if yours is old, it may be time to upgrade if you want to make this. You’ll need (at minimum) an 8-cup food processor. I use this one and love it! A good processor is a great tool to have, I use mine multiple times per week! It’s great for making hummus, dressings—etc.
Ingredients
(Yield: One 2lb. bag of cashews yields 2 batches or mason jars worth of cashew butter)
1 lb. (half of the bag) of organic raw cashews (I use + recommend these)
2 Tsp. Organic vanilla extract
1/2 Tsp. sea salt

Method
Roast the entire bag of cashews (two batches worth) on a baking sheet at 350 degrees for 10 minutes until they’re slightly golden brown. Let them cool completely.
Place half of the baking sheet of cashews (about 1 lb) in the food processor along with the vanilla, sea salt and collagen. Begin to process on high. It will begin to build up on the edges so every few minutes you’ll have to take the food processor lid off and push the cashews down. You will repeat this process until it becomes cashew butter. Usually this takes me about 30 minutes from start to finish. This all will depend on the strength of your food processor! Just when you think it won’t become cashew butter, it will start to turn into a butter. Be patient!! It truly takes longer than you think.
Transfer to glass jar and store in a cool place. You can store this in the fridge but it’s best at room temp.
